3 Tips for Keeping Your Grilled Meats Juicy

- Sear the meat – If you sear meat using a high heat before lowering the heat to hit the right internal temp, you lock in those tasty juices. One way you can do this with a gas grill is to turn on the burners for just one side of the grill. You sear the meat over the hot flame. Then transfer it to the other side of the grill and close the lid to finish cooking without burning the outside of the protein.
- Use tongs – If you have ever wondered why grill masters use tongs instead of a long fork, trapping in juices is the reason. Once you’ve created a nice exterior crust to trap in that delicious flavor, it would be silly to pierce the meat with a fork and let it all drip off into the fire.
- Let it rest – After you take the meat off the grill, it needs about 10-15 minutes to reabsorb all of the juices. Cut into it before that, and you’re just giving those tasty juices to the cutting board instead of your guests.
